So, it’s another quick-quick, DINNER IN 12 Minutes

Spaghetti alle Vongole e Carciofi

Spaghetti with Clams and Artichokes

Just too good for words …..

This dish just screams Summer and Fun and Eat Me!

Ingredients

olive oil – about 1/2cup

5 cloves garlic finely chopped

1 red onion finely chopped

3 red chillies finely sliced

1 chicken stock cube

freshly ground black pepper to taste

2 glasses of dry white wine

1 x 130g jar of clams in brine (use the brine as well as it’s packed with flavour)

1kg fresh or frozen clams in their shells

800g cherry/ rosa tomatoes cut in half

5 artichoke hearts – I used a jar of grilled artichokes preserved in oil

a large handful of parsley roughly chopped

1 x 500g packet of spaghetti

1 willing and very lovable cook

Method

Bring a large pot of salted water to a rolling boil.

Add the packet of spaghetti, give the pot a good stir and stir the pasta frequently as it cooks.

Now get cracking with your sauce … the spaghetti takes 10 MINUTES to cook so you have plenty of time.

Heat the olive oil in a large frying pan, add the garlic, chicken stock cube, chilli and red onion and brown

Add the bottled clam meat with the brine and fresh clams to the pan, give them a good stir and add the wine.

Add the 2 – 3 glass of wine and cook just until the alcohol has cooked off.  To check when the alcohol has cooked out just put your face over the pan and have a whiff – the alcohol fumes hit you in the face.  When all of the alcohol has gone the acrid aroma of the alcohol disappears.

Here TrickyRicky has his face over the pan and is testing to see if the alcohol has cooked off.

Add the tomatoes and the artichokes ..

Cook the sauce for about 5 mintes on high, reducing it slightly.

Reduce the sauce for about 5 minutes .. you want all of the flavours to marry with each other.

Keep tasting the sauce and adjust the flavour to your liking .

Don’t forget to keep tasting you sauce and adjust the seasoning to suit you liking.

Lift the cooked spaghetti out of the water, drain for a few seconds and add directly to the pasta sauce.

Add the roughly chopped parsley and mix the spaghetti well, you want sauce all over that beautiful spaghetti.

and serve

A plate of pure pasta pleasure.
