Chocolate Salami Cupcakes with Caramel Icing and Flakes

Chocolate Salami Cupcakes with Caramel Icing and Flakes are a real time saver.  I had such a great week last week. Busy, hectic and rushed but filled with so much love and laughter. My family came over on Monday evening to see their Cuzzie Jade and Aunty Brenda. Yet another huge pasta pot occasion. Trickyricky produced a fine tummy filling Bolognaise with chilli for the adults and without for the little people. Jade got to play with and laugh with her two little cuzzies Ethan & Jenna. Watching them laugh and giggle and play hide a go seek with such gusto was so much fun. Bubble’s was in puppy heaven – following the kids around and scrounging cupcakes and spare sweeties from their sticky fingers. Sister Judy arrived with my mums photo collection which dates back to the early 1900’s – we laughed ourselves ‘stukkend’ looking at our slim waistlines, shoulder pads that would protect you from a Springbok rugby prop tackle, eighties bouffants and hubbies with long gone thick mops of hair!!!


I fed the kiddies some more Bling Bling Peanut butter, caramel fudge & praline cupcakes so they were in ‘orbit most of the evening! He he he! Jade was in the mood for another cooking session so we shopped for all ingredients with a sugar count off the Richter scale and got down and chocolaty in the kitchen with our Sous-Chef Bubbles – who did a great job of keeping the floor clean!


So today – for Meat Free Monday we are going Bling Bling Chocolate Salami Cupcakes – iced, c/o Chef Jade like ice cream cones …. Complete with Flakes!! They looked like ‘99’ cones that we used to buy from the Ice Cream Vans groaning out agonisingly flat recordings of Greensleeves, of yore! You must remember them!

Chocolate Salami cupcakes with Caramel Icing and Flakes.







250g dark chocolate

250g butter

1 1/2 packets of Marie Biscuits

2T Castor sugar

2 eggs at room temperature.






Bubbles joined in – she was in charge of keeping the floor clean!



Melt Butter in the microwave

Melt Chocolate in a bowl over a pot of simmering water.



Beat the eggs and sugar together until light and fluffy.



Add the melted butter into the melted chocolate then add this mixture into the egg & sugar mixture.

Mix well together



Place the Marie biscuits into a plastic bag and bash them with a rolling pin to break up the biscuits

Add the broken biscuits to the mixture and give a jolly good stir.


You have two choices now:


Either spoon into your cupcake cups and place in the freezer for a few hours


Spray a loaf tin/ ice cream container/ plastic box with spray and cook then pour in the mixture and freeze overnight.

You can double up on the mixture and keep a Salami Cake ready for the kiddies large and small – the cake will easily keep for 3 months!


These days preggie mums don’t eat raw egg so I guess it’s not suitable for them although in my day I pretty much ate everything! Raw has never been a problem for me …. I craved some raw foods that I had never eaten – how is that possible? Weird!!!



It’s really handy to have helpers who don’t mind helping with the ‘washing up!’



Max and Daniele grew up looking forward to all of the family birthdays to get their chops into a piece of Salami Cake! Both Dan & Max had Salami Cake 21st Birthday cakes!! This is a staple birthday ‘must have’ and both boys can bang out their own rendition of this. You can play with the recipe – adding nuts, layers of dark and white chocolate – dried fruit and even chunks of nougat have been added on the odd occasion!
