I am filled with all the joys of summer today. The Rachel Finlayson swimming pool on Durban’s beautiful Golden Mile, where I swim every morning at 5.30am, was in the most diabolical state on Monday this week. Not the best way to start ones week. The water was nothing but rancid – K, my swimming partner suggested that I pretend that we were swimming in a river – in attempt to buoy my spirits. I must have looked like a race horse my nose was pulled up so high! I clambered out of the water – a few laps short of a training session mumbling and grumbling gruffly about the diseases that I had probably just contracted whilst trying to stay fit and healthy!
Thankfully everyday this week the cleanliness and water quality has improved 100% each day. We arrived this morning – just before sunrise to be greeted by beautiful clear blue water – it was like diving in to a big pool of liquid crystal. The world is really quiet at 5.30am and swimming takes you into an aquamarine world that is filled with the sounds of peace. The sun’s rays pierce the surface of the water and celebrate the day by dancing a twinkling morning jig with the water – together they make magical light waves as they shimmer together. They don’t mind at all if you dive down and join them either …..
We were so enthralled with the water quality that no training took place today – we just couldn’t resist watching the sun burst out from behind a silver lined cloud complete with Sunshine-D rays outstretched over the pool. I discovered that I am a human compass as I float facing north and K discovered that she is a human pendulum as she floats upright! This must sound so random – but – anyone who knows me knows that I get lost in my own driveway! I HAVE NO sense of direction at all!!! Nada – Bokeroli – so in future, should I get lost (which I so often do) all I need do is rip of my klobber and jump in a pool – float – and WALLA! I will know where north is!!! Bonus!!!
Thai Fresh Happy Duck Spring Rolls

I totally agree with Justin Bonello’s (of Cooked Living Free) ideology in terms of knowing where our food comes from AND establishing what circumstances these animals are raised in. I understand that it’s not possible for all of us to trundle around the countryside checking up on food producers and farmers. My suggestion to you all is to support your local markets and farmers markets.
Buying direct you are cutting out the large chain stores – who are known to screw over the farmers for cut prices – use environmentally hazardous packaging – demand crippling payment terms from supliers etc. You also get to meet and chat to the farmers and in most cases, they are more than happy for you to visit them.

Back to The Duck Lady – Their ducks spend their entire lives waddling around free range and are not fed any food containing hormones or fish products. This duck is such a joy to cook with and the meat abounds with deep duck flavours.

Fresh Happy Duck Spring Rolls with Hoisin & Lime dipping sauce.
For the Duck
2 duck breasts
2 Tbs of Hoisin Sauce
Score the skin of the duck breasts, paint them with the 2 Tbs of Hoisin sauce and
place in a Ziploc bag for an hour to marinate.
Once marinated remove them from the bag and fry skin down for 5 minutes in a moderate pan
then turn them over and fry for another 5 minutes on the other side
allow the meat to rest for at least 5 minutes and slice into 5mm slices.
For the Fresh Spring Rolls
6 rice paper spring roll wrappers
Julienne some cucumber, daikon radish, red pepper, sugar snap peas, spring onion
( you could also use julienne carrot or zucchini – use either what you have in your fridge or your favourites)
A handful of fresh coriander or basil
1 chopped red chilli (if you like it hot)
1 avocado pear – peeled and sliced
For the Dipping Sauce
4Tbs Hoisin Sauce
In a small bowl whisk together the hoisin sauce and the juice from the 2 limes.
I added some fresh mango to this one … yummy!
Run the rice wrappers under the tap for about 30 seconds
Place on a board and place the following in the centre of the wrap
3 pieces of sliced duck or chicken breast
A little of each julienne of fresh crunchy veggies
Some fresh coriander – or basil
some chopped fresh chilli
Wrap them up by drawing up the bottom first – then fold in your two sides and
finally roll it up to form a fresh spring roll.
Serve with the Hoisin and Lime dipping sauce and some
A healthy summer lunch.
